Broccoli

Low in calories and price, high in tons of good nutrients, Broccoli is the Queen of vegetables! Eat it on it’s own, dip the little ‘trees’ in dressing or your homemade vinaigrette, stir it up in a pan with olive oil and garlic, cook it on pizza, steam it or chop it raw and put it in salads – eat it any way you want, just eat it!

Broccoli isn’t just a member of the veggie royal family, it’s also a serious cancer-fighter. People whose diets are high in broccoli are less likely to develop common cancers. All this, in a package that’s easy to eat and easy to snack on. Just remember, most of the really good nutrients are in the dark green tops, not the stalks.

Broccoli Nutrition:

With about 31 calories per cup, broccoli is super-high in Vitamins C and K and Calcium. It also contains vitamins E, A, and B6; thiamin, riboflavin, pantothenic acid, Calcium, Iron, magnesium, phosphorus, selenium, folate, potassium, and manganese.

In other words, it’s great for all of you, especially for skin, bones, brain, eyes, circulatory system and immune system.

  • Broccoli has as much calcium as milk and more vitamin C than your average orange!
  • The word broccoli comes from the Latin work Brachium, which means branch, or arm.
  • The darker the color of the florets - green, bluish green or even purple – and the firmer it is, the more beta-carotene and vitamin C it has. Don’t buy broccoli if its top is yellowish.
